Perfect Scallops
serves 4
Ingredients
1 1/2 lbs dry sea scallops
1 T oil
1 T butter
Instructions
Dry the scallops by placing them between multiple sheets of paper towels and lightly pressing down for 10 minutes. Season both sides.
Heat the oil in a skillet over very high heat until smoking. Add the scallops and cook without moving them until the bottoms are well browned.
Add the butter to the pan, flip the scallops, and continue cooking until the scallops are done and register 115 degrees.
Plate and serve hot.
